Creamy Tomato Baked Orzo with Vegetables | Vegan

Orzo is a staple in Greek cuisine and I’m Greek so I’ve had my fair share of orzo dishes in my life. I love orzo in cold salads and soups but especially like it in casseroles when the weather is cold.

This recipe is perfect for days when you’re craving a delicious homemade meal but don’t want to spend a ton of time in the kitchen. It requires minimal prep time and equipment.

This is the type of recipe where you just throw everything in the oven and forget about it until it’s time to take it out.

This baked orzo is cooked with zucchini and eggplant, in tomato sauce and it’s rich, creamy and of course vegan.

You don’t have to cook your ingredients separately. You simply chop your veggies in small cubes and throw them in a baking dish along with your orzo. Then you mix together your sauce ingredients, bring them to a boil, and pour your sauce over your orzo.

You cover and bake for 40 minutes until all the liquid is absorbed. That easy! This delicious baked orzo will make a great dinner or side dish and I’m sure you will make it over and over.

A creamy casserole dish with orzo pasta, tomato sauce and vegetables!

  1. Preheat your oven at 400 degrees.
  2. In a baking dish pour your orzo and vegetables and mix so everything is well distributed in the dish.
  3. In a small saucepan add your water, tomato, spices, salt and nutritional yeast and bring to a simmer.
  4. Pour your sauce over your vegetables and make sure your pasta is covered with water.
  5. Cover your baking dish tightly with aluminum foil, place in the middle rack and bake for about 35-40 minutes until all the liquid has been absorbed.
  6. Let cool for at least 10 minutes and serve with some fresh parsley or vegan cheese.

    Notes:

  • You can refrigerate any leftovers for up to three days.
  • Instead of zucchini and eggplant you could also add other vegetables like broccoli or carrots.
