Peanut Butter Glazed Crispy Tofu | Vegan, 6 Ingredients

We all love us some nice baked crispy tofu bites. Be it a snack, or a topping on our salads and bowls, it’s a great way to add some flavor, texture and of course a good dose of protein to our meal.

I love to meal prep some baked tofu every week. It’s easy, relatively quick to cook and mess free, and it’s perfect to throw in a bowl with some vegetables and grains for a healthy salad.

For this recipe, you will only need six pantry friendly ingredients and about an hour. You will need a block of firm or extra firm tofu and then a few more ingredients for your peanut butter sauce.

You will love these tofu bites because they are perfectly crispy but still a bit soft and chewy inside. They are salty and and a bit spicy with a perfect peanut butter creaminess.

There is one step that’s imperative for this recipe and that is to press and drain your tofu. Draining the tofu from all liquid will help it absorb the sauce better and become crispier.

To press your tofu you can simply place it on a plate wrapped with a clean towel and then place a heavier objet like a pot on top of it. Let it sit like that for about 30 minutes or so. If you don’t feel like improvising and find yourself going through this process quite often, you can simply purchase a tofu press (find one here).

Also you will need some corn starch to coat your tofu pieces with, as that helps make them extra crispy.

This recipe may be quite simple but I promise you the flavor is amazing and you will end up making these again and again!

Crispy baked tofu bites glazed with a peanut butter sauce!

Directions

  1. Press your tofu by wrapping it with a clean towel, then place it in a plate and put a heavy pot of top of it. Or you can drain it by using a tofu presser. Let it drain for at least 30 minutes.
  2. Preheat your oven at 400 degrees and line a baking tray with parchment paper.
  3. Once the tofu has drained, slice your tofu in the middle lengthwise, then cut into small cubes (about one inch thick).
  4. Prepare your peanut butter sauce by mixing the oil, soy sauce, Sriracha, peanut butter.
  5. Put the tofu cubes into a bowl, pour the peanut butter sauce on top and mix gently until all pieces are covered with the sauce. Then add the corn starch and give everything another mix.
  6. Lay your tofu pieces on the lined tray, place in the oven and bake for 15 minutes. Then remove from the oven and flip the tofu so if can cook evenly. Cook for another 15 minutes. Remove from oven, let cool for 5 minutes and enjoy!

    Notes:

  • You need a neutral oil for this sauce such as vegetable oil or grapeseed oil
  • You could add a bit more Sriracha if you prefer your tofu spicier.
  • I used firm tofu for this recipe but extra firm will work great as well.
  • For more flavor you could marinate your tofu in the sauce for a few hours or overnight.
