Avocado Matcha Protein Pudding | Vegan, Dairy-free
I had a few avocados that were about to go bad in the fridge and had no idea what to do with them. So I sliced them and put them in the freezer so I can use them for smoothies later. After a few hours I came up with the idea of making a pudding with them since I was not really in the mood for a smoothie.
I used to make avocado puddings with just avocados, coconut milk and maple syrup but lately I’m really into matcha so I thought how about adding some matcha in it too. The results were astonishing and so I had to share this.
This matcha pudding is super simple, made with only four ingredients and tastes amazing. It’s sweet, creamy and refreshing. You can taste both the matcha and the avocado. It has healthy fats and protein since there is protein powder added in it. And of course it’s vegan, dairy-free, gluten-free and refined sugar-free.
Whether you’re in the mood for dessert or a protein rich snack this will satisfy you!
Matcha Avocado Pudding| Vegan, Dairy-free
A four ingredient protein pudding made with avocado and Matcha green tea!
- Add all your ingredients in a blender and blend on high speed for about a minute or until you have a smooth texture. Halfway you might have to stop and scrape the sides and blend again.
- Serve in a bowl and enjoy on its own or with some fruit or shredded coconut or nuts.
- Instead of maple syrup you can use agave syrup.
- Instead of the Trader Joe’s protein powder you can use any unsweetened or vanilla flavored protein powder you would like. However I prefer this one because it’s very mild flavored so it won’t mask the matcha flavor.
